The Origin Of This Recipe

Those who know me know I love to host. The problem with hosting is finding recipes that I can cook in bulk. I always struggle to have enough food for everyone to enjoy and not feel like they can’t get a second plate.

Those struggles disappeared with this cheesy fold over street taco recipe. One football Sunday, my husband was having his friends over to watch the Eagles game (Go Birds). I decided to make this cheesy fold over street taco recipe for the party as the main dish. Reason being, it was a grab-and-go finger food that our friends could enjoy whenever they wanted.

I doubled (maybe tripled) the recipe that day and had over 30 street tacos waiting to be consumed. They were all downed before the 4:00 EST games started. I finally found my recipe that I could cook in bulk for parties.

This was a huge success. From then on, this recipe became the staple of football Sunday in our household. If you’re hosting a party, you NEED to make this recipe.

Ingredients Needed For Cheesy Fold Over Street Tacos

Many of the ingredients needed for this recipe are in the form of spices. If you don’t want to make your own taco seasoning, you can always purchase seasoning packets from the store. If you’re gluten-free, make sure your seasoning is gluten-free.

Here are the ingredients needed to make cheesy fold over street tacos:

  • 1 pound ground beef
  • 1 yellow onion chopped
  • 2-3 teaspoons chipotle chili powder use to your taste
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 2 teaspoon garlic powder
  • 1/4-1/2 teaspoon crushed red pepper use to your taste
  • 1 teaspoon kosher salt
  • 12 corn tortillas
  • 2 tablespoons extra virgin olive oil
  • 2 cups shredded cheese of choice. I blend cheddar, pepper jack, monetary jack, and monterey.

How To Make Cheesy Fold Over Street Tacos

  1. Preheat the oven to 425 degrees F.
  2. In a large skillet, add the ground beef and onion over medium heat. Cook, breaking up the beef as it cooks, until browned (about 5 minutes).
  3. Add the chipotle chili powder, paprika, cumin, garlic powder, red pepper flakes, and salt to beef.
  4. Add 1 1/2 cup water to beef and mix until combined. Simmer until the sauce has thickened slightly around the beef, (about 6-8 minutes depending on your level of heat). Remove from heat.
  5. Heat 6 corn tortillas for 30 seconds in the microwave, until pliable. Place tortillas on a baking sheet, and drizzle each side of the tortillas with olive oil.
  6. Lay tortillas flat on baking sheet and layer evenly with cheese and beef. Fold the other half of the tortilla over the beef and cheese filling, gently pressing to hold taco in place.
  7. Transfer baking sheet into the oven and bake for 5-8 minutes, then flip and cook another 5 minutes, or until the cheese has melted and the tortillas are golden crisp.
  8. Serve the tacos topped with jalapeño ranch, avocado, cilantro, and any other desired toppings. Enjoy!

How To Store Your Leftovers

These street tacos are extremely easy to store and they’re delicious the next day. Simply store in your favorite refrigerator container. I recommend eating all the tacos that are topped with jalapeño ranch or other sauces. Storing the tacos with sauce on them may cause the tortillas to become soggy.

When you’re looking to enjoy your leftovers the next day, reheat in the microwave or air-fryer. Feel free to top with a little extra cheese!
