The Story Of This Recipe
When I graduated college, I was in search for a healthy, filling chicken dish. I’ve always been a chicken parmesan sandwich fan and wanted to learn how to make it myself. Rather than enjoying the carbs of bread, I decided to make a true chicken parmesan dish over pasta.
I researched gluten-free chicken parmesan and at the time, didn’t see much. Considering the breadcrumbs were the only ingredient that contained gluten, I decided to make my own recipe using gluten-free breadcrumbs.
From that day on, this has been one of my favorite dinners. My husband and I love making this recipe in the summer after a long day. This is one of the most filling recipes on my blog. Being full (not bloated) on chicken parmesan represents a job well-done.

Ingredients Needed To Make The Best Chicken Parmesan Bake
For an impressive dish like this one, it’s amazing to see it only contains a few ingredients. To make the best chicken parmesan bake, you need:
- 4 boneless skinless chicken thighs
- 1 ball fresh mozzarella
- 1 cup gluten-free bread crumbs I prefer Italian style
- 1 egg
- 2 tablespoons olive oil
- 1/4 cup fresh parsley
- 1/4 cup fresh parmesan
How To Make The Best Chicken Parmesan
- Preheat oven to 350°F.
- On cutting board, trim the fat off the boneless skinless thighs.
- Heat frying pan over medium-high heat and add olive oil to pan. Let olive oil heat to a simmer.
- In one bowl whisk an egg. In another bowl, add breadcrumbs.
- Dip chicken thigh into egg and coat both sides of chicken thigh with breadcrumbs.
- Once olive oil starts to shimmer, add coated chicken thigh to pan and cook for 3-4 minutes before flipping.
- While the thighs are cooking add sauce to the bottom of a baking dish
- Flip thighs and cook an additional 3-4 minutes until crispy and golden brown.
- Once chicken is golden brown on both sides, layer in crispy chicken thighs over sauce in the baking dish. Repeat for all chicken thighs.
- Top each thigh with 1-2 tablespoons of sauce, then layer with mozzarella.
- Cover baking dish with aluminum foil and bake for 25-30 minutes. Remove foil and bake another 5-8 minutes until cheese is golden and bubbly and internal temperature of the chicken is 165°F.
- Remove from oven. Top with fresh parmesan and parsley.
- Serve over your favorite pasta and enjoy!
Storing Your Leftovers
There’s nothing better than looking in the fridge and seeing leftover chicken parmesan. This recipe stores great and reheats well.
If you have leftover chicken parmesan, store it in your favorite refrigerator safe container. I like to reheat using the microwave for 90 seconds. Another way to reheat your leftovers is in the air fryer or toaster oven. This is a bit more complicated but produces great results!
