What Makes The Best Homemade Loaded Breakfast Biscuits?

I’ll be honest, it took me a few tries to nail this recipe. This one took lots of testing, tasting, and dish washing. It was hard to nail the texture. The first time I made this recipe, the biscuits came out dry. Then I couldn’t get the biscuits to stay together. By adding a subtracting portions and ingredients, I finally nailed the soft, moist, golden brown texture I was searching for.

When I make this recipe, I’m looking for a finished product that replicates the texture of a golden-brown cracker barrel biscuit. A harder brown shell with a soft, steamy, warm inside. That’s hard to do!

Considering this is a gluten-free, Whole30 recipe, there are certain ingredients that I cannot add that Cracker Barrel can. However, I have tested and perfected the recipe. This homemade loaded biscuit recipe is perfect when the biscuits are crunchy on the outside, soft and chewy on the inside, soft and warm, and 100% Whole30 and gluten-free.

Ingredients Needed For This Whole30 Breakfast Recipe

Let’s take a peak at the ingredients you need to have on hand to make this loaded biscuit recipe.

  • 1 small yellow onion, diced
  • 1 med-large red bell pepper, diced
  • 1 lb ground turkey, 93% lean
  • 1 1/2 cups almond flour, extra fine
  • 1/2 cup coconut flour
  • 1/2 tsp ground black pepper
  • 1 1/2 tsp salt
  • 2 tsp italian seasonsing
  • 2 tsp baking powder
  • 6 large eggs
  • 1 tsp avocado or olive oil, I prefer avocado cooking spray

How To Make Homemade Loaded Breakfast Biscuits

  1. Preheat oven to 400 degrees F. Line baking sheet with parchment paper.
  2. Heat skillet over medium-high heat and add onion and bell pepper. Sauté until onions become translucent and pepper starts to hint orange (about 3 minutes).
  3. Add ground turkey to pan, combine and continue to stir until turkey is browned (about 8 minutes). Set aside.
  4. In a large bowl, mix together all dry ingredients (almond flour, coconut flour, pepper, salt, italian seasoning, and baking powder).
  5. In a second bowl whisk together the eggs.
  6. Add in whisked eggs to dry ingredients and use rubber spaluta to combine.
  7. Once combined fold in the onion, pepper, and turkey mixture until just combined.
  8. Using a large ice cream scoop, scoop balls of dough onto the parchment lined cookie sheet. Gently press around the sides and top of each ball to flatten and shape into biscuits
  9. Place in oven and cook for 17-20 minutes, until golden brown.
  10. Remove from oven, let cool, and enjoy!

Storing Your Leftovers

One of the best parts about these Whole30 biscuits is that the recipe produces 12 BISCUITS! That’s a lot! Chances are, you’ll have some leftovers. Storing your leftovers is easy, I’ll show you how.

Unlike other biscuits, these Whole30 biscuits need to be stored in the fridge. Why? They contain egg and ground turkey, two ingredients that need to be refrigerated. Not refrigerating these biscuits could result in sickness.

To store these biscuits, grab your favorite refrigerator safe container and store in the fridge. They are good for up to 72 hours after cooking!
