The Story Of This Recipe
As a collegiate athlete, I was always looking for new ways to have a healthy, protein filled breakfast. Through trial and tribulation, I had the idea of putting protein powder into my pancake mix (after scanning the internet, I certainly did not come up with that idea). I figured by adding that scoop of protein powder, I could help transform my favorite breakfast (pancakes) into a nutritious meal to kickstart my busy day.
Additionally, I was in college! I always looked for ways to be more efficient with my cooking. I didn’t have access to a Kitchen Aid standing mixer or even a hand mixer at that. So, I decided to use the blender. I had a NutriBullet and let me tell you, it works GREAT! Within a few seconds, my pancake mix was fully blended and combined.
Through those two key ideas, I created the blender protein pancakes recipe. Over time, I’ve refined and perfected the recipe and include the best ingredients I can find that continue to make a healthy breakfast. Ingredients Needed For These Gluten-Free Pancakes
Remember, these pancakes are protein-packed and full of healthy ingredients. That’s the point! This recipe is an alternative to the traditional pancake recipes. Let’s keep it healthy!
- 2 cups certified gluten free rolled oats I prefer Bob Mills Old Fashion Oats
- 1 ripe banana
- 1/2 cup egg whites
- 2 scoop vanilla protein powder 60g, I prefer Orgain Plant-Based Protein
- 1 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup almond milk
How To Make Gluten-Free Blender Protein Pancakes
- Add all ingredients to a blender.
- Blend (30-60 seconds) until completely smooth.
- Allow batter to rest (about 5 minutes) to allow it to thicken up.
- Heat 1-2 tablespoons of butter in a skillet over medium-high heat. Once butter is melted and starts to brown, reduce heat to medium low heat (about 2-3 minutes).
- Using 1/4 cup, scoop batter onto hot pan. Cook over medium-low heat about 3-4 minutes each side.
- Continue with all batter until gone.
- Top with maple syrup, berries, nut butter, or extra banana slices and enjoy!
