Gluten-Free Blender Protein Pancakes

- 2 cups certified gluten free rolled oats I prefer Bob Mills Old Fashion Oats
- 1 ripe banana
- 1/2 cup egg whites
- 2 scoop vanilla protein powder 60g, I prefer Orgain Plant-Based Protein
- 1 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup almond milk
Add all ingredients to a blender.
Blend (30-60 seconds) until completely smooth.
Allow batter to rest (about 5 minutes) to allow it to thicken up.
Heat 1-2 tablespoons of butter in a skillet over medium-high heat. Once butter is melted and starts to brown, reduce heat to medium low heat (about 2-3 minutes).
Using 1/4 cup, scoop batter onto hot pan. Cook over medium-low heat about 3-4 minutes each side.
Continue with all batter until gone.
Top with maple syrup, berries, nut butter, or extra banana slices and enjoy!
