We’d pop a few in the toaster and off goes our day. However, there comes a certain age where it’s no longer “appropriate” to enjoy Eggo waffles. So, let’s make our own!
In this recipe post, I’ll show you exactly how to make the best homemade cinnamon waffles that taste just like the Eggo squares we used to eat as kids. AND, these waffles are gluten-free. This is a super simple breakfast recipe that yields 8 waffles squares, meaning you can cook this recipe for a whole family.

If you’re like me, you associate the taste of cinnamon waffles with the beloved Eggo waffles we ate growing up. To make the best homemade gluten-free cinnamon waffles, we’re attempting to replicate that cinnamon flavor we know and love. I have good news for you, it’s easier than you think!
Homemade cinnamon waffles are all about texture. We’re going to nail the flavor, I’m confident in that. We need to focus on making that soft, warm, almost chewy texture that I look for in a waffle. If you like your waffles crispy or maybe even a little burnt, you can do that too! However this recipe will produce a waffle that’s soft and just golden brown on the outside.

- Kitchen Aid Standing Mixer (substitute with mixing bowl and electric hand mixer)
- Waffle Maker (I recommend Krups Breakfast Set)
- Rubber Spatula
- Measuring Cups (teaspoon, tablespoon, 1/4 cup, 1/3 cup, 1/2 cup, 1 cup)
Ingredients For Gluten-Free Cinnamon Waffles
Introducing… the ingredients need to make the best gluten-free cinnamon waffles! In this recipe, we need a set of ingredients to make the waffle batter and a few add-ons to create the cinnamon topping. Let’s take a look.
Waffle Batter Ingredients
- 1/4 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups gluten free flour (I like Bob Mills 1-for-1 gluten free flour)
- 4 teaspoons baking powder (certified gluten-free if necessary)
- 1/4 teaspoon salt
- 1 1/2 cups milk (dairy-free if necessary)
Cinnamon & Sugar Topping
- 1/4 cup granulated sugar
- 1/8 cup of ground cinnamon
How To Make The Best Homemade Cinnamon Waffles
- In a kitchen aid standing mixer, mix together all wet ingredients (eggs, vegetable oil, vanilla, and milk). Mix until combined.
- Add in all dry ingredients (sugar, GF flour, baking powder, and salt). Mix on medium speed for 2 minutes or until just combined.
- In a small bowl, mix together 1/4 cup of granulated sugar and 1/8 cup of ground cinnamon. Mix until combined.
- Plug in waffle maker and heat on low-medium heat.
- Once heated, grease both top and bottom pans and use 1/3 cup to scoop batter into pan, cooking 4 waffles at a time. Before closing waffle maker, sprinkle a layer of cinnamon and sugar over top of the batter to taste.
- Cook 2 minutes or until waffle maker beeps. Remove from heat.
- Repeat process until all batter has been used.
- Top with butter and syrup and enjoy!
Storing Your Leftovers
If you’re not cooking for a family or kids, there’s a good chance you have leftover waffles. I mean, unless you can eat 8 waffles in one sitting… impressive!
If you do have leftovers I have good news for you. These waffles taste AMAZING cold. Simply store in the refrigerator using a refrigerator safe container and save for the next morning. You can then choose to reheat in the microwave or enjoy them cold (I prefer them cold).
