4th Of July Almond Brownie Cake

  • Measuring Cups (cup, 1/2 cup, 1/4 cup, ,tablespoon, teaspoon
  • Cake Pan (or brownie pan if you're making a square)

Ingredients
  

  • 3/4 cup gluten-free flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 12 tablespoons unsalted butter equivalent to 3/4 cup
  • 1 1/2 cup sugar divided into 1 cup and 1/2 cup
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 egg yolk
  • 1/2 cup dark chocolate chips I prefer dark chocolate chunks
  • 1/4 cup blended almonds place 3/4 cup of almonds into Nutribullet and blend
  • 1/2 cup red, white, & blue M&Ms

Instructions
 

  • Preheat oven to 350 degrees F.
  • Mix together your dry ingredients (flour, salt, cocoa powder) in your small mixing bowl and set aside for later.
  • In your saucepan, combine your butter, oil, and 1/2 cup of sugar over low-medium heat. Mix until combined, stirring frequently. Once combined, remove from the heat to prevent burning.
  • In your large mixing bowl, whisk together your eggs, egg yolk, vanilla, and 1 cup of sugar.
  • SLOWLY pour and combine your butter mixture into the large mixing bowl. Whisk as you pour, combining the butter mixture and egg mixture.
  • Add your dry ingredient mixture to your large mixing bowl. Whisk until fully combined creating your dark brown brownie mix.
  • Add dark chocolate chips to large mixing bowl and fold in with your spatula.
  • Grease your cake pan or brownie pan and empty large mixing bowl into your cake pan.
  • Bake for 20 minutes before adding 1/2 of your blended almonds (1/8 cup) to the top of your brownies. Distribute blended almonds evenly creating an almond crust topping. Bake for 20-25 more minutes with blended almond topping.
  • After 45 combined minutes, remove your brownie cake. Add the rest of your blended almonds to the top as well as red, white, and blue M&Ms to taste.
  • Let your cake cool for 20-30 minutes before cutting and enjoying.
