Ingredients

granulated sugar
1/2
cup
softened butter

large eggs
1 1/2
cups
gluten free flour
I like Bob Mills 1-for-1 gluten-free flour
1/2
teaspoon
baking powder
1/2
teaspoon
baking soda
1/2
teaspoon
salt
1/3
cup
milk
dairy-free if necessary
1/2
cup
chocolate chips with more for topping
2-3
ripe bananas
Instructions
Preheat oven to 350°F
In a Kitchen Aid standing mixer, add bananas and mix for 2 minutes until mashed.

Add all wet ingredients and sugar (eggs, butter, milk, and sugar) and mix for 2 minutes.

Add remaining dry ingredients (GF flour, baking powder, baking soda, and salt). Mix on medium speed for 2 minutes or until just combined.

Fold in chocolate chips.

Use ice cream scoop to divide into greased or lined muffin tins. Top with extra chocolate chips.

Bake for 18-20 min (depending on how full your muffins are) until golden brown.
